Our research group has expertise on the study of “antibiotic resistance in the food chain”. We have evaluated the role of food in the dissemination of antibiotic resistance, using dairy products as a model. In this context, three general objectives have been pursued: -To establish reliable breakpoints to distinguish between sensitive and resistant LAB and bifidobacteria species to antibiotics (doi:10.1017/S0022029907002543, doi:10.1016/j.idairyj.2007.01.008, doi:10.1128/AAC.00407-10, etc.) -To study the molecular basis of atypical resistances to antibiotics in LAB and bifidobacteria (doi:10.1093/jac/dkn280, doi:10.1016/j.ijfoodmicro.2007.11.029, doi: 10.1371/journal.pone.0145203, etc.) -To study the prevalence and evolution of antibiotic resistant populations and resistome in dairy products (doi: 10.1016/j.ijfoodmicro.2015.07.027, doi: 10.3389/fmicb.2017.00907, etc.)
Any project intended to evaluate the role of food in the dissemination of antibiotic resistance and/or to develop methods for the containment of resistance spread through the food chain to consumers.
